It is therefore essential that catering staff maintain rigorous hygiene habits before, during and after handling food.

With the arrival of December, one of the busiest times of year for social gatherings and activity in the catering sector, businesses must manage an increase in food handling, the use of shared spaces and the movement of people.

This context coincides with documented concerns about food safety: in recent years, hundreds of outbreaks and thousands of cases of foodborne illness have been reported in Spain, with Salmonella being one of the most frequent causes and having a significant impact on hospitalisations and outbreaks, especially those associated with food services outside the home.

Food poisoning: a risk present in catering.

Foodborne illnesses are diseases caused by eating food contaminated with harmful microorganisms or their toxins. The most common are Salmonella, Listeria, E. coli, Campylobacter, and Staphylococcus aureus. These bacteria can cause symptoms such as vomiting, diarrhoea, and fever. In severe cases, they can lead to serious complications requiring hospitalisation, especially in children, the elderly, or people with weak immune systems.

During the festive season, the risk of food poisoning increases due to the higher volume of prepared food, the variety of dishes, and large groups of diners. Therefore, reinforcing hand hygiene and good food handling practices is essential to ensure consumer safety.

  • Hands are the primary vehicle for transmitting microorganisms in food environments. Proper handwashing removes visible dirt and reduces microbial load, preventing cross-contamination between food, surfaces, and utensils. Key recommendations include:

  • Wash your hands before and after handling food, after using the toilet, touching potentially contaminated surfaces, or handling money or waste.
  • Use suitable soap and rub all surfaces of your hands (palms, backs, between fingers and nails) for at least 20 seconds.
  • Dry with single-use disposable towels to avoid recontamination.

In the food industry, in addition to hand hygiene with soap and water, the use of registered hand sanitiser solutions, such as hydroalcoholic gels with at least 70% alcohol, is recommended, provided that hands are not visibly dirty.

When food is handled in restaurants, it is recommended to use soaps free of colourings and perfumes combined with hydroalcoholic solutions that are effective against bacteria, viruses and fungi.

  • Antiseptic soap: solutions with chlorhexidine or povidone-iodine for deeper washing when necessary.
  • Hydroalcoholic solution: ideal for quick disinfection when hands are not visibly dirty, complementary to washing.
  • Dispensers and supports: wall-mounted, preferably non-refillable and operable with the elbow or photocell.
  • Drying: disposable paper towels and dispensers.

  • Nail brushes: disposable, for removing dirt from under the nails.
  • Protective creams: for dry or irritated hands due to frequent use of soaps and gels or excessive moisture.
  • Disposable gloves: they act as a barrier but do NOT replace hand washing; they should be changed frequently and always before putting them on.

  • Use of signage: Hand hygiene procedure signs help to increase the regularity of hand washing.
  • Training: Providing short training sessions on proper hand hygiene increases awareness and improves the quality of the process.
  • Consistent hygiene: Handwashing should be a consistent and effective routine to prevent foodborne illnesses.
  • Do not reuse: gloves should not be washed or reused. Disposable paper should not be used to clean different objects and surfaces.

We may not be aware of it, but behind every cream, serum, or gel we apply to our skin, there is a complex formulation that seeks efficacy, safety, and stability. Let’s explore how cosmetic formulation is carried out from a scientific view, delving into some fundamental processes and principles.

The science, technology, and skin biointeraction.

A cosmetic formulation is a mixture of ingredients designed to beautify, cleanse, or modify the appearance of the skin without altering its natural structure and functions. Depending on the type of product (skin, hair, makeup, etc.), it is essential to understand its composition and current regulations to ensure that products are safe and comply with legislation.

Cosmetic formulation is an interdisciplinary speciality that combines chemistry, biology, dermatology, and pharmaceutical technology to design products intended for the care, protection, and beautification of the skin and/or its appendages.

  • Colloidal system and phases.
    Most cosmetic formulations are structured in dispersed systems, such as emulsions (O/W or W/O), suspensions, or polymeric gels. The formulator’s goal is to achieve thermodynamic and kinetic stability through the appropriate emulsifiers, stabilisers, and preservatives.
  • Example: In an O/W emulsion, phase equilibrium is achieved by adjusting the hydrophilic-lipophilic balance (HLB) index. The optimal HLB of surfactants determines the ability to form a stable interface between the oil and water phases.
  • Skin biointeraction.
    The skin, with its lipid-protein corneum stratum, acts as a semipermeable barrier. Cosmetic interaction is governed by Fick’s diffusion phenomena and molecular affinity. Cosmetic active ingredients can act:

      • In superficial epidermal layers (antioxidants, depigmenting agents).

Protect your skin from the weather and pollution.

Harsh weather conditions, such as cold, dry air or pollution, directly affect the skin, causing dryness, irritation, dehydration, and accelerated ageing. The cold weather constricts blood vessels, and dry air reduces the natural moisture of the dermis. Pollution, on the other hand, generates free radicals that damage cells and weaken the skin barrier, even aggravating conditions such as eczema.

To prevent atmospheric effects on the skin, it is essential to maintain a skincare routine that includes gentle cleansers, consistent hydration, the use of sunscreen, and exposure to indoor environments with adequate humidity levels. Additionally, personal protective equipment and protocols are required to care for and protect the skin in the workplace.

Atmospheric effects on the skin.

The skin not only reflects genetics and lifestyle habits but also the impact of the environment and daily work. Atmospheric factors affect its health daily, and underestimating them opens the door to premature ageing and preventable skin conditions. A preventive approach, whether personal or professional, is essential to preserve skin health in the face of the ravages of the weather, pollution and the demands of the working world.

In the workplace, exposure intensifies: outdoor workers (farming, construction, fishing) suffer greater sun damage; in cold storage rooms, skin cracks; in polluted industries, irritation and oxidative stress increase; and in healthcare, constant contact with moisture and gloves can cause dermatitis.

Solar radiation: the silent aggressor.

Ultraviolet (UV) radiation causes premature skin ageing. Chronic unprotected exposure accelerates the loss of collagen and elastin, resulting in wrinkles, sagging skin and sunspots. It is also the environmental factor most closely linked to skin cancer.

The UV spectrum is not the only one to consider. Visible light and infrared radiation also generate oxidative stress in cells, weakening the skin’s natural defence systems.

Extreme temperatures and humidity.

  • Cold, dry climates: low humidity draws water from the epidermis, promoting dryness, flaking and even eczema. Likewise, intense cold reduces microcirculation, resulting in dull skin that is prone to irritation.

  • Hot and humid environments: excessive sweating can alter the skin’s pH, promoting the proliferation of bacteria and fungi. Sebum production also increases, exacerbating acne or seborrhoeic dermatitis.

Environmental pollution.

Particulate matter, toxic gases and heavy metals present in urban air generate free radicals that damage the skin barrier. This results in loss of radiance, chronic low-grade inflammation and increased susceptibility to spots and wrinkles. Several studies have shown that pollution accelerates skin ageing in a similar way to the sun.

Wind.

Although less frequently mentioned, wind can erode the skin’s hydrolipidic film, causing dehydration and sensitivity. In people with pre-existing skin conditions (rosacea, atopic dermatitis), it can aggravate symptoms and trigger acute flare-ups. This is a clear example of the effect of the atmosphere on the skin.

Protecting your skin involves using daily sunscreen, moisturising regularly, washing gently to remove pollutants, applying antioxidants and using physical barriers such as clothing or hats in extreme weather conditions.

Skin at risk in the workplace.

The effects of atmospheric factors are not limited to leisure time. Many workers are continuously exposed to adverse environmental conditions, which multiplies the impact on their skin. Occupational medicine and occupational dermatology agree that these conditions should not be underestimated: they impact quality of life and productivity and, in some cases, can lead to permanent disability.

  • Outdoor workers: (agriculture, construction, fishing, transport): they face intense solar radiation, extreme temperatures and wind. Their risk of developing skin cancer is significantly higher than that of the general population.

  • Work in cold environments: (cold storage rooms, food logistics): the skin becomes dry and cracked, which can cause pain and secondary infections.

  • Contaminated industrial environments: (metallurgy, workshops, factories): continuous exposure to particles and chemical compounds increases oxidative damage and skin irritation.

  • Healthcare and cleaning staff: although in enclosed spaces, excessive humidity, frequent use of gloves and friction cause contact dermatitis and chronic irritation.

The environmental consequences of the daily use of cosmetics in the hospitality industry.

The hospitality industry must not only take care of the customer experience but also commit to the environment. One of the least visible aspects, but one with real consequences, is the use of cosmetics by users. In environmental terms, this consumption generates a considerable footprint: according to UN Environment, the cosmetics industry produces 120 billion units of packaging per year, most of which is non-recyclable.

Many cosmetics contain microplastics and harmful chemicals that end up in aquatic ecosystems. In the hospitality industry, the daily use of cosmetics is multiplied and indirectly contributes to water pollution, greenhouse gas emissions in their production, and the accumulation of plastic waste. Therefore, it is essential that the sector becomes aware of this issue and promotes sustainable practices in the selection and use of these products.

Why are cosmetics used in hotels?

Hotel and tourist accommodation guests often use cosmetic products during their stay for convenience, personal habits, and wellness expectations. Many establishments offer a basic range of amenities like shampoo, shower gel, soaps, body lotions, and even beauty or shaving kits. These products, most of which are single-use, seek to enhance the customer experience and reinforce the perception of service quality.

During extended stays, it is common to use hygiene and beauty products daily, which increases the amount of plastic packaging, chemicals, and microplastics that are discarded in the hotel environment. This consumption is often neither regulated nor optimised and has a direct effect on the environmental footprint of each establishment.

Small packaging, big problem.

Every year, more than 5 billion plastic amenity bottles are discarded in hotels around the world.

This represents a huge amount of single-use plastic waste, much of which is not recycled and ends up in landfills or natural ecosystems. For this reason, countries such as Spain, France, and the United States (California and New York) have begun to limit or ban mini-containers in tourist commodities, promoting refillable or bulk solutions.

Plastic containers and waste:

  • Non-recyclable plastic containers.
  • Small single-use bottles.
  • Caps, labels, and wrappers that end up in landfills.

Chemical composition: a hidden problem:

  • They are not biodegradable.
  • They contaminate water when disposed of down the drain.
  • They can affect aquatic fauna and alter ecosystems.

A single guest can use between 2 and 4 plastic bottles per day. If the hotel replenishes amenities daily, this translates into hundreds of tonnes of unnecessary plastic, which, multiplied by thousands of rooms and millions of stays per year, results in a disastrous environmental problem.

Sustainable initiatives.

Faced with this growing problem, many hotels and chains have begun to implement more sustainable solutions with practices that reduce waste and the environmental impact of their cosmetics. This is increasingly viewed favourably, improving the establishment’s image among customers who are increasingly aware of their environmental footprint.

  • Refillable dispensers: Large chains such as Marriott, Accor, and IHG have eliminated individual bottles in thousands of their establishments, replacing them with fixed refillable dispensers.
  • Biodegradable or compostable amenities: some brands offer products in packaging made from cardboard, corn, or recyclable materials, such as Nature Group or Stop The Water While Using Me!
  • On-demand policies: certain hotels limit the supply of single-use amenities and only offer them if the guest requests them, reducing unnecessary waste.
  • The EU Ecolabel guarantees that cosmetics used in hotels are sustainable, safe, and have a low environmental impact.
  • Pioneering legislation: in California, from 2023, toiletries in plastic packaging will be banned in hotels with more than 50 rooms; this measure will be extended to all hotels in 2025.

Skin ageing: causes, factors and effects that condition its appearance.

The passage of time and daily exposure to environmental aggressors leave their mark on our skin, transforming its texture, tone and vitality. From the gradual loss of collagen and elastin caused by the biological clock to the cumulative impact of ultraviolet radiation, pollution and oxidative stress, every wrinkle and blemish tells a story of exposure and repair.

At the cellular level, regenerative capacity decreases and free radical damage increases; at the surface, it manifests itself in expression lines, dryness and loss of firmness. Understanding these internal and external factors is the first step in designing an effective prevention and care strategy that combines healthy habits, photoprotection and tailor-made dermatological treatments.

What is skin ageing?

Skin ageing is a natural process in which the dermis loses its main characteristics due to the passage of time. Age is unforgiving. But… is the passage of time the only cause?

The answer is no. There are both intrinsic and extrinsic factors that contribute to ageing. How do we see this process in the skin? We can observe changes in tone, contrast, luminosity, and texture. Appearance of expression lines at the beginning and deeper wrinkles later on. Significant changes in the thickness of the outer layer of the skin, sun spots, among other effects.

What are the main causes?

An intrinsic cause is natural or internal and is part of the natural oxidation process. This is typical of the passage of time, health and, in short, age. On the other hand, extrinsic causes are part of accelerative environmental and dietary patterns and unhealthy habits.

Intrinsic causes (natural or chronological):

  • Natural age: decrease in collagen and elastin over time.
  • Genetic factors: individual predisposition to ageing.
  • Lack of hydration: Skin naturally loses moisture with age.
  • Stress: affects cell regeneration and collagen production.
  • Lack of sleep: prevents proper cell repair.
  • Repetitive movements: generate expression lines and wrinkles over time.

Extrinsic causes (environmental or photoaging):

  • Sun exposure: UV damage that breaks down collagen and elastin.
  • Smoking or ingestion of toxic substances: reduces circulation and damages skin fibres.
  • Pollution produces free radicals that damage the skin.
  • Poor diet: lack of nutrients and antioxidants that protect the skin.

We must bear in mind that the older our skin is, the more likely it is to suffer from some skin lesion or pathology. That is why personal care, hygiene, and environmental prevention routines are so important to maintain healthy skin.

Is all skin the same? Find out why your skin is unique.

Although at first glance all skins share the same ‘façade’, each is a unique living ecosystem. Their behaviour depends on the interaction of genetic, hormonal and environmental factors, as experts from the American Academy of Dermatology.

  • Composition and thickness of epidermis.

    The number of cell layers and lipid production vary from individual to individual, influencing the tendency for dryness or oiliness and the speed at which fine wrinkles appear. Manual MSD studies detail how the dermis and epidermis become thinner with age, losing elasticity and barrier function.

  • Tone and pigmentation.
    Melanin content determines not only colour but also resistance to photoageing. Darker skins show less UV damage, although it may develop more persistent sun spots (lentigines), according to the Mayo Clinic.

  • Skin sensitivity and barrier.
    The ability to tolerate active ingredients, whether retinoids or exfoliants, depends on the integrity of surface lipids. A weakened barrier favours chronic inflammation and inflammaging, as the American Academy of Dermatology guidelines point out.

  • Lifestyle and environment.
    Some factors, such as diet, sleep, and consistent sun protection, influence the expression of genes associated with cellular ageing.

Prevention from the outside in, by age.

Among the key biological changes of skin ageing is the progressive loss of collagen, which, from the age of 25 onwards, is reduced by approximately 1% per year. Also, while free radicals cause oxidative damage, which accelerates the formation of wrinkles. Chronic inflammation (‘inflammaging’) hinders tissue repair, and the loss of natural lipids in the epidermis leaves the skin drier, less elastic and more vulnerable.

The summer sun is a serious risk factor for outdoor workers' skin.

During the summer, outdoor workers, like labourers, farmers, gardeners, and urban cleaners, are exposed to the risks associated with solar radiation and extreme heat. This can produce dermal stress that is very harmful to health and causes sick leave that reduces production and even work activity.

Summer's invisible enemy.

When summer is coming, millions of people worldwide are exposed to a silent and invisible enemy every day: solar radiation and extreme heat. For all outdoor professionals with long-term exposure, this is not only an uncomfortable question; it can be lethal.

In this sense, sun and extreme heat are not just a seasonal discomfort but a real occupational hazard that must be dealt with as diligently as dangerous machinery or toxic chemicals. Outdoor workers have a right to safe conditions, which encompass shade, water, breaks, training, and sunscreen protection.

How does our body react to extreme heat?

Humans need to keep their internal temperature stable at around 36.5-37.5°C. But when the outside temperature is very high, the ability to thermoregulate is tested.

Natural cooling mechanisms:

Peripheral vasodilation: blood vessels in the skin expand to release heat.
Sweating: sweat evaporates and cools the skin, but water and salts are also consumed.
Accelerated breath helps us to release some accumulated heat.

When these mechanisms fail, excess heat can lead to:

Dehydration → causes decreased blood volume.
Heat fatigue → causes rapid weakness, dizziness, and blurred vision.blurred vision.
Heat stroke (body temperature > 40°C) → causes multi-organic failure in less than 30 minutes and death if not immediately reversed.

A curious fact to bear in mind: at a temperature of 35°C with 60% relative humidity, our body loses up to 1 litre of water per hour with a moderate level of physical exertion.

The risks of sun and heat. Beyond the tanning.​

Skin cancer.

  • Prolonged exposure to UVB and UVA radiation damages the DNA of skin cells.
  • Melanoma is the most aggressive type and can be fatal.
  • Sunburns can cause inflammation, pain, and increased susceptibility to skin infections.

Heat stress.

  • It is recognized as a risk of the job in many regulations.
  • Increases the risk of occupational errors and accidents (e.g., falls, cuts, burns).

Heat disorders.

  • Heat cramps, heat syncope, heat exhaustion, and heat stroke.

A technical occupational safety fact: symptoms of heat stroke include hot, dry skin (no more sweating), confusion, and loss of consciousness and require immediate medical intervention.

Applied science: Evidence-based preventive measures.

Fortunately, science has thoroughly studied the effects of heat and solar radiation on the working environment. Several international bodies have established specific protocols to protect workers exposed to the elements. These include NIOSH (National Institute for Occupational Safety and Health, USA), INSST (Instituto Nacional de Seguridad y Salud en el Trabajo, España) and OSHA (Occupational Safety and Health Administration, USA).

Their recommendations focus on four areas of intervention: Sunscreen protection, physical protection, adequate hydration, and working organization. There are the most effective strategies, backed by scientific evidence.

Sunscreen.

Creams with SPF 30 or higher, broad spectrum (UVA/UVB). Apply 30 minutes before exposure and repeat every 2 hours or after heavy perspiration.

Physical protection.

Wear breathable clothing, long sleeves, and fabrics with ultraviolet protection. Use glasses with a 100% UV filter (prevents cataracts).
Use helmets or caps with neck protection.

Strategic hydration.

Drink 250-500 ml every 20 minutes, even without thirst. Replace electrolytes with isotonic drinks if the effort is prolonged (>1 hour).

Work planning.

Avoid intense physical work between 12:00 and 17:00. Encourage rotation, breaks in the shade, and gradual acclimatization.

Solar protection is to work safely.

Solar radiation and extreme heat are real occupational hazards, and their prevention is not optional.
It is the shared responsibility of companies, professionals, and administrations. They must guarantee the health of those who work in the sun, providing all the tools available.

Appropriate photoprotector use, like DERMATEC 50+, should be part of the standard protocols for the prevention of occupational hazards, with the same status as any other certified PPE. This is the reason that skin protection is the same as the health, dignity, and life of the worker.

What does the science say?

UV radiation is a class 1 carcinogen according to the International Agency for Research on Cancer (IARC), with conclusive evidence that it causes skin cancer, including melanoma.

Prolonged occupational exposure to the sun can lead to actinic keratosis, which is considered a precancerous lesion and recognized as an occupational disease in several European countries.

Numerous clinical and laboratory studies have shown that regular use of sunscreens drastically reduces the incidence of premalignant and malignant skin lesions.

European countries such as Germany, Austria, and France have incorporated occupational sun exposure into the official list of occupational diseases, recognizing its impact on occupational health.

Photoprotection as a preventative measure.

From an occupational risk prevention (ORP) perspective, the inclusion of sunscreen as PPE is perfectly compatible with the current legal and technical framework:

Article 17 of the Law on Prevention of Occupational Risks (Spain) establishes the obligation to provide appropriate PPE when it is not possible to avoid a risk by other means.

89/656/EEC Directive stipulates that PPE must provide effective protection against risks that cannot be prevented by collective technical means.

The INSST, in its technical document on “Heat stress and sun exposure,” recognizes the use of sunscreens as an “essential individual measure.”

A new reality under the sun.

Dirt on hands complicates everything.

On this occasion, the blog ‘The Dirt on My Hands’ addresses hand hygiene from a health perspective, with a specific focus on nursing homes and geriatric centres. We reflect on how incorrect hand hygiene increases the risk to the health of our elderly, who are extremely vulnerable to nosocomial infections.

We analyse the main routes of pathogen transmission, highlighting the role of healthcare technicians. We also emphasised the importance of promoting a culture of responsibility and prevention, demonstrating that a practice as simple as hand washing can make a difference to the quality of care and prevent infectious outbreaks in care homes and nursing homes.

What kind of dirt can we find on our hands?

In nursing and care homes, hands are one of the main routes for the transmission of infections. Although they may appear clean, they can harbour all kinds of dirt. Identifying what kind of contaminants can be accumulated is the first step to understanding why good hygiene is not optional, but vital.

There are two main kinds of dirt on hands:

  1. Visible or mechanical soiling:
    This is the most obvious: traces of food, body fluids, soil, dust, secretions or any particles that can be seen with the naked eye. In a geriatric setting, this can include anything from residue from dressings or creams to biological debris such as mucus or faeces after toileting.

  2. Invisible or microbiological dirt:
    This is the most dangerous and often the most overlooked. These are bacteria, viruses and fungi that cannot be seen but are transmitted. Some common examples in geriatrics include Staphylococcus aureus, E. coli, Clostridium difficile or even influenza virus or SARS-CoV-2. These can adhere to the skin after contact with contaminated surfaces, people, utensils, or during routine procedures such as changing a nappy or taking a blood pressure.

In addition, there is a third implicit type:

  1. Soiling due to carelessness or negligence:
    It is the most difficult to eradicate: lack of proper washing or the time needed, misuse of gloves or forgetting to disinfect after contact with residents or their belongings. It is invisible while it leaves its mark in the form of infections.

Care-related nosocomial infections.

About healthcare-associated infections, according to the Spanish Society of Preventive Medicine, Public Health and Health Management, the scientific society that promotes the Study of the Prevalence of Nosocomial Infections in Spain (EPINE), they cause 7,414 deaths annually in Spain and cause direct costs of €2,025 million. In addition, data from this study, in 2023, indicate that the prevalence of having a healthcare-associated infection in hospitalised patients aged 70 years or older was 10.02%.

Residents in private residential centres or social services for the elderly present a high risk of acquiring infections, not only because of their vulnerability due to their age, frailty and limited autonomy but also because of the large presence of comorbidities and polymerization, where there is a higher risk of adverse effects and interactions associated with the prescription of antimicrobials and because of the characteristics of these centres.

In addition, the frequent use of external devices and the fact that they share common objects, areas and caregivers facilitates the acquisition, development and cross-dissemination of multi-resistant microorganisms, making the infection incidence high in these centres. For all these reasons, it is considered relevant to promote and apply prevention and control programmes in nursing homes and social and healthcare centres to reduce Healthcare Associated Infections (HCAI), also known as nosocomial infections.

What are the pillars for action?

These five pillars summarise the keys to ensuring effective, sustained, and safe practice. Training, standard setting, resourcing, monitoring and awareness are essential to protect those who need it most.

  1. Infrastructures and resources. In order to carry out a hand hygiene improvement programme. It is essential to have with the existence of adequate infrastructures and resources, among which we highlight: individual alcohol-based products for workers and for common use by family members and residents of the centre. Adequate facilities for hand washing with water, alcohol-based products (ABP) or soap dispensers and paper towels.

  2. Training and coaching of staff. Recognise the completion of training on a nominative basis (competence verification system). Staff training (at the moment of incorporation and repeated periodically, at least once a year) following the WHO model of the 5 moments, adapted to 4 moments for socio-health and geriatric centres.

  3. Programme evaluation. Identify successful outcomes and foster collaborative learning. To highlight opportunities for improvement to focus new actions.

  4. Reminders in strategic areas of the workplace. In poster form and information leaflets in areas where there may be a risk of cross-transmission of micro-organisms, such as medication preparation rooms, treatment rooms, physiotherapy rooms, etc.

  5. Foster a good safety climate. It is essential to create an environment in which everyone involved is made aware of the importance of hand hygiene for the safety of everyone: workers, residents and family members.

Which products are suitable for removing dirt from hands?

The right products to remove dirt on your hands depend on the type of dirt (visible or invisible) and the context. Here is an overview of the best options for keeping skin clean, healthy and safe:

Furthermore, implementing appropriate dosing systems ensures and promotes good personal hygiene practices in any collective setting.

1. Soap and water (preferably lukewarm).

  • When to use? When hands are visibly soiled or contaminated with blood, body fluids, food or chemicals.
  • Effectiveness: removes visible dirt and reduces microbial load.
  • Recommended type: liquid soap, fragrance-free and pH-balanced to avoid irritation. In healthcare facilities, ideally antimicrobial (e.g. chlorhexidine).

2. Alcohol-based solutions (lotion/gel).

  • When to use? When hands are not visibly soiled quick disinfection is needed (e.g. between contact with residents).
  • Effectiveness: Highly effective against bacteria, viruses and fungi. It should contain 60% to 80% alcohol (ethanol or isopropanol).
    Caution: Do not remove visible dirt. Do not replace washing with soap and water in all cases.

Preserving food safety without altering its organoleptic properties and quality is one of the basic food safety principles.

Most of all, food safety.

Food safety guarantees food safety through measures that prevent contamination and food-borne diseases. Improper handling can cause the proliferation of micro-organisms, chemical contamination or foreign bodies. All of these factors affect consumer health and product quality.

Some standard key practices include proper washing and hands and surface disinfection, cold chain maintenance, prevention of cross-contamination and appropriate food cooking.

Compliance with international regulations and standards, such as the Hazard Analysis and Critical Control Point (HACCP) system and Good Manufacturing Practices (GMP), is essential to ensure safe food and reduce risks.

Food poisoning, the crude reality.

Food poisoning represents a significant public health challenge in Spain. According to data from the European Food Safety Authority (EFSA), around 500 food outbreaks are reported every year in Spain, most of them attributed to inadequate food handling and preservation.

In 2019, 758 outbreaks of food poisoning were reported in Spain. These affected 10,702 people. Of these, 469 required hospitalisation and 11 deaths were recorded. The average rate of outbreaks per 100,000 inhabitants was 1.67.

At the European level, 5,763 food-borne infectious outbreaks were reported in 2022, an increase of 44% compared to the previous year.

The consequences of food poisoning range from mild symptoms, such as vomiting and diarrhoea, to severe illnesses that can require hospitalization and even death. Vulnerable populations such as children, the elderly and people in precarious situations are the most affected.

Recent incidents in Spain have highlighted the seriousness of these infections. For example, in October 2024, at least 20 people were poisoned after eating meat contaminated with Escherichia coli during an event in Pamplona.

Likewise, in January 2025, 44 cases of intoxication related to the consumption of “montaditos de pringá” in a tavern in Cordoba were investigated, resulting in the death of one person.

These data highlight the need to reinforce hygiene measures and proper food handling, both at home and in catering establishments. The aim is to prevent outbreaks of food contamination and protect people’s health.

Food safety and food security.

Food safety is central to the concept of safety, as it ensures that food does not pose a risk to the health of the consumer. It also refers to the implementation of procedures, standards and controls that prevent biological, chemical and physical contamination at all stages of the food chain, from production to final consumption.

Main food safety hazards.

Food safety hazards are classified into three categories:

  1. Biological hazards: include pathogenic microorganisms such as Salmonella spp, Escherichia coli, Listeria monocytogenes and Clostridium botulinum, which can cause foodborne illness.
  2. Chemical hazards: These refer to residues of pesticides, antibiotics, heavy metals and naturally occurring toxins that can accumulate in food and pose health risks.
  3. Physical hazards: These are foreign bodies such as glass, metal, plastic or wood fragments that can contaminate food during processing and handling.

Food safety management systems.

To minimise these risks, various systems and international regulations are applied, among which the following stand out:

  • Hazard Analysis and Critical Control Points (HACCP): A preventive system that identifies and controls critical points in food production to reduce the risk of contamination.
  • Good Manufacturing Practices (GMP): A set of procedures that guarantee hygiene and quality control in food processing.
  • ISO 22000 Standards: International standard that sets out the requirements for the implementation of a food safety management system.
  • European Food Safety Authority (EFSA) and Codex Alimentarius Regulations: Guidelines that regulate food safety in the European Union and globally.

The importance of monitoring and training.

Ensuring food safety requires the implementation of strict controls. These include microbiological monitoring, sanitary audits and product traceability. In addition, continuous training of food handlers is essential to prevent errors related to hygiene and handling, thus reducing the risk of food poisoning.

The rigorous application of good practices and control systems ensures that food products are safe for consumption.
